As an avid fan of everybody’s favorite flightless farmyard bird, the chicken, I am determined to try as many culinary versions of this perfect poultry as I can. We’ve all had a bit of this, or a sampling of that, along the way, but as far as Mediterranean Marijuana Chicken is concerned, personally, I had never had the pleasure of having such a dish. But once I made it for myself, I was blown away, and slightly upset with myself for never trying it before.

Instructions

  • Before you do anything, you’ll first want to season your chicken with your preferred amount of salt and pepper.
  • Be sure to get both sides nice and seasoned. When you’re happy with how that’s looking, you can toss both of those chicken breasts into a mixing bowl.
  • At this point, you’ll need a smaller, completely different mixing bowl. In this one, toss in your cannabis-infused olive oil, as well as your thyme, oregano, garlic, and lemon juice.
  • Combine all of those ingredients together as best you can, then pour that newly-infused marinade over those chicken breasts in the other bowl.
  • Let that marinade soak and absorb its flavor and potency into the chicken for 10 minutes, at the very least. Everything should be at room temperature for this part of the process, too.
  • Meanwhile, you should preheat your oven to 400°.
  • Before it gets too hot in there, open your oven, and set one rack roughly 6” or so above the heat source.
  • Now, remove your chicken from that first bowl, and place the freshly-marinated breasts into a baking dish.
  • Top those birds off with your remaining marinade from the bowl, and be sure to cover them as much (and as evenly) as you can. This is where the flavor (and potency) will come from.
  • When your oven hits that desired temperature mark, you can toss that baking dish full of marinated chicken in to bake for 40-45 minutes.
  • When the juices on the chicken are running clear, and there is no more “pink” visible in the center of the breasts, you’ll know they are good to go.
  • When you see that, move that baking dish to the top rack, and hit the “Broil” on your oven for about 5 minutes.
  • The second you see they are developing a delicious brown color, you can remove them from the oven, and place them on the counter to cool momentarily, before serving them up while they are still relatively hot.
  • And that’s it.
